Another quick and easy French classic.
Ingredients:
- 1 ready made frozen pie crust ( i use wholly wholesome whole wheat 9″ pie crust available at whole foods) or see Maud’s recipe for a home made pie crust.
- a slab (approx. 1/3 lb) of salt pork , sliced into 1/3″ x1/3″ sticks. (Alternatively you can use Pancetta, a slab of bacon or ham).
- 2 eggs + 2 egg yolks
- 1 cup skim milk
- 1 cup heavy whip cream
- salt, pepper, fresh grated nutmeg, cayenne pepper, star anise.
- optional: 3/4 cup grated swiss cheese (use emmental or gruyere)
Preheat the oven at 360 degrees.
If you need to precook your crust, do it now. It’s always good to add beans on top of the crust when you precook it to avoid it raising.
Saute the salt pork with the star anise in a skillet until most of the grease has melted. When they are done, drain out the grease and star anise and reserve the lard.
Pour the milk and heavy cream in a large bowl. Add the eggs and extra yolks. Begin stirring with a hand whisk. Add the spices (pepper, a good tbsp of freshly grated or powdered nutmeg and cayenne pepper. If you are using salt park only add a tiny pinch of salt).
Stir the mixture until it has become homogeneous.
If you have decided to use cheese, place it on the bottom of the pie crust. I usually grate it myself using a Y-peeler to obtain very thinly sliced cheese that I place on the bottom of the pie for it to melt evenly.
Add the lard evenly to the pie and pour the batter on top of it, filling the pie crust almost to the edge.
Bake in the preheated oven for 30 minutes.
To tell if its done, stick a knife in the middle, if it comes out dry, its ready! Bon Appetit!
Enjoy hot or warmed up the next day, or even cold with a salad on the side.
