1. Add a tablespoon of chopped cilantro, jalapeño pepper, red onions in the mortar and cover with salt.
2. Grind it until it becomes a liquid paste.
3. Scoop the avocado with a spoon, add the remaining chopped onions, cilantro and jalapeños to a large bowl with the paste. Slowly mix it without mashing it too much. Unless you like really smooth guac… Adjust as needed with more cilantro, onions, jalapeños and / or salt. Top with lime (or orange) slices and let it rest at least 20 min in the fridge before serving.
