Making of a world famous tacos night picnic

The guac’ is world famous! So I’ve been told. A zesty cilantro crema, seafood, meat and / or cumin flavored vegetarian tacos filling, you can have it. Your palate won’t regret you stopping by.

What you need

Lime Cilantro Crema

+ 1/4 cup thinly sliced green onions
+ 1/4 cup chopped fresh cilantro
+ 6 tablespoons reduced-fat sour cream
+ 1 teaspoon grated lime rind
+ 1 1/2 teaspoons fresh lime juice
+ 1/4 teaspoon salt
+ 1 garlic clove, minced

Combine all and set aside.

World Famous Guacamole

+ 3 tablespoons chopped onion
+ ½ teaspoon minced Serrano chili, or more, to taste
+ 1 ½ teaspoons finely chopped cilantro leaves
+ ½ teaspoon salt, or more, to taste
+ 1 small vine-ripened tomato
+ 1 ripe Hass avocado
+ Tortilla chips for serving

Combine half chopped onions, chili, cilantro with 1/2 tsp of salt and grind to a paste using a mortar. Chop the tomato and remove all seeds. Roughtly cut the avocado in chunks. Combine all, add salt to taste and set aside in fridge for 15 min (or more).

CUMIN AND LIME SALAD

+ 1/2 teaspoon lime zest
+ 1/4 cup fresh lime juice
+ 2 tablespoons light olive oil
+ 1 1/2 teaspoons ground cumin
+ 1 teaspoon sugar
+ 1/2 teaspoon salt
+ 1 jalapeño pepper, sliced
+ 1/2 cup fresh cilantro leaves

Reserve the cilantro leaves and jalapeño peppers, and combine all other dressing ingredients together. Let sit for 10-15min before adding to your salad of choice. For the salad, I like to use a mix of purple cabbage, corn, tomatoes, radishes, scallions and fresh mangoes. Finish by combining the salad mix, dressing, cilantro leaves and jalapeño peppers together.

+ 8 tomatillos
+ 1/2 onion
+ 4 garlic cloves
+ japapeno / other chili
