The best breakfast avocado toasts


Avocados… we love them so much that they have become scarce. So treat them respectfully, and make it a treat only once in a while to indulge in one of the most satisfying breakfast ever.

There is a difference between guacamole, our world famous one is a hit, usually consumed towards the end of a long day. Throw in the spices and pick me up ingredients. But the way to prepare avocados for a fine start of the day is very different. You will want it smooth, tangy, but only slightly spicy. Moreover, it is different to eat it with bread than it is with tacos.

However we process the base the same way. By creating a paste, made of cilantro, scallions, Serrano peppers and salt. Skip to the recipe below to get started on a good fulfilling morning breakfast.

Ingredients

  • 2 medium size perfectly ripe avocados
  • 2 to 3 juicy limes
  • a handfull chopped cilantro
  • 1 to 2 medium scallions, thinly sliced
  • 1/2 deseeded serrano pepper thinly sliced (optional)
  • salt
  • homemade honey bread or 9 grains
  • salt
  • a mortar


Directions

  1. Add about a tbsp of each, chopped cilantro, scallions and serrano peppers in a mortar and cover with salt
  2. Grind until it becomes a paste. Add salt as needed
  3. Slowly process the remaining, in small batch, adding a bit of salt each time.
  4. Slice the avocados in half, and using a spoon, add chunks of avocados to the paste. Do not mash them!
  5. Roll your limes and pound them slightly so they release the maximum of juice. Slice them in half and squeeze one or two of them over the avocados.
  6. Now mix it all, making sure to mix and not mash. The avocado will disintegrate slightly with the lime juice. We want this to be done naturally, without forcing it.
  7. If the consistency is not smooth enough, meaning all the juice has absorbed but you still have too many chunks of avocado left, add the juice of a third lime.
  8. Taste it and adjust if needed with more salt or lime
  9. Spoon it to a tight lid covered container and set in the fridge for as little as 10 min, and can keep as long as 2 days
  10. Now go ahead and toast your homemade honey bread, 9 grains slices or good campagne bread, spread a good amount of avocado paste and enjoy!
