This is a perfect satisfying lunch salad or refreshing dinner appetizer, to serve along with a pasta dish or other heavy dishes.
Quick, easy and oh so tasty juicy tomato salad
Ingredients
- 4 nicely ripped and sweet tomatoes
- 1 tbsp pine nuts
- a dozen olives from Nice
- 12 anchovies filets (optional)
- A handfull basil leaves
- 3 tbsp Olive Oil
- 1 lemon
- 1 tsp Balsamic Vinegar
- Salt and Pepper
- 1 garlic clove
Directions
- Wash and slice the tomatoes. Place in a deep plate
- Dry roast the pine nuts until fragrant.
- In a bowl, combine salit, pepper, lemon juice, balsamic vinegar, and slowly add the olive oil while stirring vigorously. Add the minced garlic.
- Pour the vinaigrette on the tomates, then add the anchovies filets, pine nuts and olives on top.
- Tear the basil leaves into small bits by hand, and spread over the salad. Voila! So easy and tasty
It’s all about the tomatoes so pick them right. Serve with fresh bread to dip in the sauce.
